Seattle, Washington

Hi Everyone,

I recently came back from a great trip from Washington. I mainly toured the colleges Seattle Pacific University, University of Washington, and University of Puget-Sound. I also went around Seattle and I really fell in love with the city. It had gorgeous architecture and I especially loved the rainy weather. I just included a few photos below from
University of Washington, Pike Place Market, Chihuly Glass Museum, and the Experience Music Project Museum.

Happy Halloween


I recently went to Mickey’s Halloween Party with my friend Ellie. We went as characters from Lion King. I went as Shenzi, the hyena and Ellie went as Scar. It was so much fun. If you don’t know what the party is, it is a fun night where you can see a Halloween only Fireworks show, which was amazing and you go trick or treating at stations which were set up around the park. I hope you all had a wonderful Halloween.

Aji de Gallina

Hi Everyone,

Sorry I haven’t been posting in a while. I recently just got situated at my grandparents house and finished school in Huntington Beach, CA. We just moved back from our two year long stay in Chile and are looking to find a place to live. Hopefully we can find a good place to cook instead of having to use my grandparents’ kitchen and their appliances.

Aji de Gallina

Aji de Gallina is a traditional Peruvian dish. When I lived in Chile, Peruvian food was a main cuisine. This dish originated from French chefs finding work in Peru, and local cuisine from Peru was combined with influences from the French. This recipe is one of my favorite Peruvian dishes I made while in Chile. It’s pretty spicy, so you can go light on the chile paste if you want to.


You can poach the chicken, but I recommend just getting a rotisserie chicken. It’s more flavorful and less work on your part.


I know it might seem a little weird to soak your bread and then blend it, but trust me it’s delicious! It makes for a creamy and rich texture.


The spices are what makes the meal so great. They blend so well together!


Here are the spices, garlic, onions, and yellow chile paste. You can usually find the paste in the grocery store, but if you can’t find it you can buy amarillo spice and just add a little bit of olive oil. Mix together to form a paste.


Blending the onion mixture, walnuts, and bread will make for a really creamy and thick base.

Yield: 4 servings


  • 1 rotisserie chicken
  • 4 cups cooked rice
  • 1-1⁄2 cups evaporated milk
  • 2 slices white bread
  • 1⁄4 cup vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons yellow chili paste
  • 1⁄8 teaspoon black pepper
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 cup chopped walnuts
  • 1⁄2-1 cup chicken broth
  • 2⁄3 cup grated Parmesan cheese
  • 2 teaspoons salt
  • 4 black olives, finely chopped
  • 4 hard-boiled eggs, peeled


  1. Remove skin from chicken. Shred the rotisserie chicken to fine threads.
  2. Combine evaporated milk with bread and let absorb.
  3. Heat oil in a saucepan; fry onion, garlic, chili paste, black pepper, turmeric, and cumin. Cook until onion is translucent.
  4. Finely chop the walnuts before adding to the blender.
  5. In a blender, blend onion mixture with milk, bread, and chopped walnuts to a smooth, thick consistency.
  6. Return mixture to pan and keep the heat on low to avoid scalding the cream sauce.
  7. Add 1⁄2 cup stock. Add more is mixture is still too thick. Fold in shredded chicken and Parmesan cheese.  Add salt and pepper to taste.
  8. Serve with rice, black olives, and hard-boiled eggs.

Fashion Inspiration: Spring

I have always loved fashion. I think I first started enjoying it and seeing it as my future when I lived in Paris, France. Fashion is so big and a major cultural aspect of France. My mom has always encouraged me to dress for the occasion and has supported my love for fashion. Since it’s springtime, I decided to start a new category for a fashion aspect to my blog. The Midi Skirt:

I absolutely love this look. As in my What I wore post I wore a midi skirt from Anthropologie. You can find it here. These skirts are so great to wear, and I just love the length of where they end. The one I have ends at about mid calf to the ankle. These are great skirts for Spring especially with all the florals, bright colors, and patterns.

The 2-Piece Match Outfit:

These are so popular especially for Spring. I have yet to own an outfit of this sort, but they are so great! I think it’s a great twist on just a dress or jumpsuit. Crop top pairing with pants or a skirt are such a great way to enjoy the Spring weather. Again, like the midi-skirt they have bright florals, colors, and patterns which I absolutely love!


These have always been a personal favorite of mine. I own Free People long overalls and Topshop short overalls. These are a Spring essential. The shirt underneath is where you can add color. You can get patterned overalls, which I love. There are also skirt overalls, which are great for Spring as well. You most commonly see overalls being worn with stripes or polka-dots.

Spring Shoes:

Flats, ankle boots, and sandals are great shoes for the spring. I love Birkenstock sandals because of their comfort and style aspect. Kate Spade is a brand that I automatically think of in Spring. flats are great for Spring especially with all the available colors. Ankle boots can be seen as a fall shoe, but I think they would work well with Spring outfits as well. I also love oxford shoes and think that they are great Spring wear.

My Career Paper

Hi Everyone!

I recently wrote a very long paper about our plan for the future in my English class. It consisted of multiple parts such as a personal narrative, research, and an interview. I wrote mine on becoming a pastry chef, which is just one of the many passions I want to pursue. My main goal for my interview was to interview a small bakery owner, however none responded to my outreach. However, I was fortunate enough to get an interview with Bill Yosses, the recently retired Executive Pastry Chef of the White House. Out of every person and company I contacted, he was the only one to respond! This was a long process to gather all the information, but I believe my writing is best when I am writing about something I am passionate about, and I loved this assignment. Here is my Career Paper.

What I Wore

Hi Everyone! Today I’m joining up with The Pleated Poppy to do the What I Wore Wednesday. Since I’m here in Chile it’s summertime! It has been so hot the past few days so I’ve been trying to wear light and easy things in this heat. This is my first time doing WIWW and so I hope I get all my links right.

longskirt2I am so in love with long skirts right now. I much prefer comfortable long skirts to short skirts I have to mind all the time. All of my outfit is from Nordstrom! Except for my skirt which is from Anthropologie


Speaking of short skirts, I like this one because of its high-waist and pattern. I would prefer it to be a tad longer, but I still love it. Probably next time I would pair it with something other than TOMS! My top is from target, my skirt is from Abercrombie and Fitch, and my necklace is from Lisa Leonard Designs.

orangedress2I absolutely love this dress! I think it is so flattering and the pattern is so pretty. A great dress for a hot day. All of my outfit is from Nordstrom as well.

San Francisco

After Christmas in Southern California with my family, my mom decided for her, me, and my sister to go to San Francisco. I had just gotten my new camera, so it was exciting to see the sights and try out the camera. We walked all over the city and it was just great. I enjoyed spending time with my sister, who I don’t get to see much these days because we live on different continents. I meant to post this a while ago, but I have been on vacation, seeing family across the U.S. San Francisco is such a wonderful place and I absolutely love the architecture. I can’t wait to visit here again.
